this ultra rare ‘piura blanco’ bean is a combination of albino and nacional genetic cacao varietals. it is a white bean grown in the arid region of the piura valley in north west peru. despite the dry and hot conditions, farmers have resourcefully used the andean waterways to consistently keep their cacao crops thriving. we’ve treated these beans to a medium roast so that the resulting chocolate maintains some light fruitiness, while the addition of milk brings out the cacao’s natural maltiness.

tasting notes: golden raisins - malt - muscovado
