'piura blanco' 60% dark milk chocolate from peru with passion fruit

this ultra rare ‘piura blanco’ bean is a combination of albino and nacional genetic cacao varietals. it is a white bean grown in the arid region of the piura valley in north west peru. despite the dry and hot conditions, farmers have resourcefully used the andean waterways to consistently keep their cacao crops thriving. the piura blanco bean offers natural fruitiness as a result of its genetics and fermentation process, so we decided to enhance that with the subtle addition of passion fruit.
