Tasting notes: Green banana - Olive oil

This gorgeous high percentage bar is made using cacao from a single farm (Hacienda San Cayetano) in the northern state of Carabobo, Venezuela. The cacao is fermented in wooden boxes for 6 days and then patio dried. We have roasted this origin at a medium temperature for a short time. The resulting chocolate is INCREDIBLY creamy and delicious. The profile of olive oil is verdant and lingers in the most satisfying way. Proper dark chocolate the way it was supposed to be, actually nice.
